Restauracja BursztyNova
We are happy to announce that this year’s Reception will take place at BursztyNova Restaurant.
BursztyNova is a unique restaurant created by the SPOMLEK Dairy Cooperative, a company with roots going back to 1909. SPOMLEK’s headquarters and main production plant are located in Radzyń Podlaski, but the cooperative now includes five facilities in total – also in Parczew, Młynary, Chojnice, and Bychawa. What makes it special is that it’s owned by around 1,500 farmers and employees whose families have been part of the cooperative for generations. SPOMLEK is best known for producing aged cheeses. Many people are familiar with their SERENADA breakfast cheeses, but their true gems are found in the SKARBY SEROWARA line: Bursztyn, Szafir, and Rubin. These exceptional cheeses are made using traditional methods and mature anywhere from three months to three years.
The idea for the BursztyNova restaurant came about through conversations with customers. SPOMLEK realized that in Poland, there are very few places where you can not only taste a variety of cheeses but also learn about them. That’s exactly what this place offers. The menu is built around their cheeses, but the goal goes beyond serving great food – it's also about sharing knowledge and inspiring people through cheese. What’s truly special about BursztyNova is how it turns each dish into a story. It’s a place where long-aged cheeses are at the heart of the experience – made with passion, tradition, and time. The restaurant combines the heritage of Polish cheesemaking with a modern culinary twist. You'll find original flavor pairings across pastas, snacks, desserts, and beautifully crafted cheese boards.
